The pan di stelle cheesecake was an experiment the other afternoon, on the occasion of the return of the culinary Thursday in the family I decided to prepare everyone's favorite dessert, the cheesecake! So after seeing the packet of pan di stelle in the pantry and after a peek in the fridge, I had the idea, a base of biscuits and butter, stuffing with philadelphia, ricotta and condensed milk and all enriched with pieces of biscuit inside, a pure pleasure. After posting the photo on fb you immediately asked me for the recipe and I ran to write it and upload the photos, I couldn't make you wait too long to give you the recipe for my pan di stelle cheesecake, it's too greedy not to try it. How to make star cake cheesecake
Chop the pan di stelle biscuits
Collect them in a bowl, add the melted butter and mix to tie everything well
Arrange the biscuit base on a springform pan and compact everything well, then put in the fridge to harden for 30 minutes.
Meanwhile, prepare the filling. Soften the gelatine leaves in a bowl with cold water
Whip the ricotta with the philadelphia
then add the cold condensed milk from the fridge and continue to whisk until you get a smooth cream
Dissolve the gelatin in a spoonful of warm milk
Then add to the cream mixture and mix quickly to mix it with the dough
Coarsely chop some pan di stelle biscuits and add them to the cream
Stir to mix then take the base from the fridge and pour the cream inside. Put the starfish cheesecake in the fridge for at least 6 hours
Then, cover with crumbled biscuits, garnish with some whole biscuits and bring to the table
